Tradition that belongs to this territory has allowed the Sagrantino vines to survive over the centuries, a clear, authoritative response from a terroir that has not allowed the loss of its native variety. Caprai's winning intuition was precisely that of recovering tradition in a modern key. Innovation passes through continuous experimentation, both in the agronomic and oenological fields. In the agronomic field, the use of appropriate cultivation techniques, the rationalisation of phytosanitary management, the limitation of nitrogenous fertilisation, genetic enhancement with the search for new clones and the study of the best environmental situations for growing the vine, represent for Sagrantino and, in general, for the other grapes grown on the estate, the main way to obtain quality grapes. In the enological field, we work to best interpret the characteristics of the different grapes, especially the enormous polyphenolic heritage in which Sagrantino is rich. Innovation for us is also synonymous with openness to new communication strategies. At Arnaldo Caprai, we believe in the effectiveness of the web. Our website is not only a showcase, but also an important source of communication with enthusiasts and operators in the sector. By offering and exchanging information and opinions, but also services and products such as Nero Outsider the first wine sold only online, or registration for events such as the Mangialonga del Sagrantino organised by the winery. The territory is the element on which our identity is based, and the basis from which we constantly raise the quality standards of our production. With this in mind, we work to get to know the physiognomy of the Montefalco terroir better and better: its as yet unexpressed potential is gradually identified and transformed into process and product innovation. Attention to tradition, orientation towards innovation, and knowledge of the territory are the elements that define the identity of the Company, and which find a synthesis in the agronomic and oenological research activity. To enhance and disseminate the results of this activity, in March 2007 we published the volume Impresa Saperi Territorio. 18 years of research and innovation at Arnaldo Caprai which retraces our road to excellence.
